Tomato Soup Puree with Herbs
Ingredients
- Tomatoes - 3 lbs
- Onion - 2 heads
- Garlic - 4 cloves
- Fresh basil leaves - 1 bunch
- Fresh Rose Hips - 1 bunch
- Thyme - 1 bunch
- Chopped Sage Leaves - 1 bunch
- Olive Oil - to taste
- Salt - to taste
- Fresh basil leaves - to taste
- Pizza Mozzarella Cheese - to taste
- White Pepper (whole) - to taste
Step by Step guide
Step 1
Pour boiling water over the tomatoes for 1 minute, peel off the skin, cut them crosswise, and remove the seeds. Dice the flesh of the tomatoes.
Step 2
Finely chop the onion and press the garlic. Sauté the onion and garlic in olive oil.
Step 3
Tie all the herbs into one bunch.
Step 4
Place the tomatoes, garlic, and onion in a pot, add the tied bunch of herbs, and simmer over medium heat for 30 minutes.
Step 5
Remove the herb bunch and use a blender to puree the cooked vegetables.
Step 6
Season with salt and pepper to taste, and sprinkle with dried basil for flavor and aroma.
Step 7
Serve garnished with basil leaves. You can add a few mozzarella balls or croutons to each serving.
