Tomato Soup with Cod
Ingredients
- Cod fillet - 21.2 oz
- Spanish onions - 1 head
- Carrot - 2 pieces
- Celery stalk - 2 pieces
- Garlic - 2 cloves
- Parsley - 1.1 oz
- Olive Oil - to taste
- Chili Flakes - a pinch
- Baking Tomatoes - 28.2 oz
- Chicken Broth - 14 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Lemon - 1 piece
- Olive Oil - 1 fl oz
Step by Step guide
Step 1
Sprinkle the cod fillet with several handfuls of sea salt and leave it overnight. Rinse before preparing the soup.
Step 2
Finely chop the onion, carrot, celery (set aside any leaves if present), garlic, and parsley stems.
Step 3
Heat some olive oil in a pot and add the chopped vegetables, parsley stems, and chili flakes. Sauté very slowly with the lid slightly ajar for 15–20 minutes until they become soft.
Step 4
Add the tomatoes and simmer for 10 minutes, then add the broth and bring to a boil.
Step 5
Break up any large pieces of tomato with a wooden spoon and add the salted cod fillet to the hot soup.
Step 6
Cook on low heat for 15 minutes until the fish is tender and starts to flake when poked with a fork.
Step 7
Break the fish into small pieces. Taste and season with pepper, salt (if needed), and a small amount of lemon juice.
Step 8
Chop the parsley and celery leaves (if available) and sprinkle them over the soup. Drizzle with a generous amount of extra virgin olive oil.
