Tomato Soup with Fresh Basil and Cream
Ingredients
- Butter - 6 tablespoons
- Onion - 2 pieces
- Carrot - 2 pieces
- Garlic - 3 cloves
- Baking Tomatoes - 5 pieces
- Sugar - 1½ teaspoons
- Passata Tomato Sauce - 1 tablespoon
- Basil - 0.6 oz
- Chicken Broth - 3 cups
- Ocean salt - 1 teaspoon
- Ground Black Pepper - 2 teaspoons
- Cream 22% - ¾ cup
Step by Step guide
Step 1
Melt the butter in a pot. Add the onion and carrot, cook for 10 minutes. Add the garlic and cook for another minute. Then add the tomatoes, sugar, tomato paste, basil, chicken broth, salt, and pepper. Bring to a boil. Reduce the heat to low and cook uncovered for 30-40 minutes.
Step 2
Remove the pot from the heat. Blend with an immersion blender. Stir in the cream. Heat the soup, but do not boil.
Step 3
Serve with croutons and cheese. Bon Appetit!!
