Ingredients
- Olive Oil - 2 tablespoons
- Onion - 1 head
- Celery stalk - 1 piece
- Bacon - 3.5 oz
- Baking Tomatoes - 14.1 oz
- Chicken Broth - 10 fl oz
- Passata Tomato Sauce - 1 tablespoon
- Butter - 1.8 oz
- Garlic - 1 clove
- Parsley - 0.7 oz
- White bread - 8 pieces
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Heat the olive oil in a large skillet. Add the onion, celery, and diced bacon. Sauté over high heat for 2–3 minutes until the bacon is golden brown. Stir occasionally.
Step 2
Add the chopped tomatoes, chicken broth, and tomato paste, and mix well. Bring to a boil, cook for another 1–2 minutes, stirring.
Step 3
To make the croutons, mix the butter with crushed garlic and parsley. Add a pinch of salt. Spread on the bread. Place the bread on a baking sheet and toast in the oven for a few minutes.
Step 4
Add seasonings to the soup, transfer to a blender, and blend. Pour into soup bowls, sprinkle with finely chopped parsley, and add ground black pepper. Serve with hot croutons.
