Description
For this recipe, you will need 3 kg of ripe small tomatoes and 2 kg of large ripe tomatoes. The juice can be used to prepare a drink (it can be diluted with boiled water), and the fruits can be used to make salad, sauce, or soup.

Step by Step guide
Step 1
Wash the small tomatoes, prick them in several places with a sharp stick, and tightly pack them into jars up to the shoulders.
Step 2
Cut the large tomatoes and heat them in an enameled pot under a lid, without bringing to a boil. Pass the hot mixture through a fine sieve, dissolve the salt and sugar in it, and pour the mixture over the tomatoes in the jars so that the juice level is 2 cm below the rim of the jar.
Step 3
Pasteurize at 185°F (1-liter jars for 25–30 minutes) or sterilize in boiling water (8–9 minutes).
