Tomatoes with Mozzarella and Zucchini

Ingredients

  • Tomatoes - 8 pieces
  • Courgette - 2 pieces
  • Garlic - 3 cloves
  • Olive Oil - 3 tablespoons
  • Melted Cheese - 10.6 oz
  • Parsley - 1 bunch
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Wash the tomatoes and peel them. Make several cuts on each tomato so that it forms a 'book' with six slices.

Step 2

Wash the zucchini and cut it into thin rounds about 2 mm thick. Slice the mozzarella into rounds.

Step 3

Preheat the oven to 356°F. Stuff the zucchini and mozzarella into the cuts of the tomatoes, and season well with salt and pepper. Squeeze the garlic on top.

Step 4

Grease a baking dish with one tablespoon of olive oil. Place the tomatoes in the dish and drizzle with the remaining oil. Bake for 40 minutes. Sprinkle with parsley on top.
