Tomatoes with Quinoa
Ingredients
- Tomatoes - 6 pieces
- Quinoa - ¾ cup
- Basil - to taste
- Feta cheese - ½ cup
- Ocean salt - to taste
- Canned White Asparagus - 3.5 oz
- Olives stuffed with lemon - 10 pieces
- Olive Oil - 1 tablespoon
Step by Step guide
Step 1
Rinse the quinoa. Bring to a boil (2 to 1 ratio). Cook for 15 minutes. Preheat the oven to 356°F.
Step 2
Wash the tomatoes and cut off the tops. Scoop out the insides and place them in a bowl. Mix the quinoa, chopped feta, basil, olives, artichokes, oil (add garlic if desired), and a bit of tomato pulp. Stuff each tomato with the mixture. Top with a little feta.
Step 3
Bake for 15–20 minutes.
