Tongue with Spicy Sauce

Ingredients

  • Beef tongue - 1 piece
  • Spanish onions - 2 heads
  • Garlic - 4 cloves
  • Bay leaf - 2 pieces
  • Dried Chamomile - ½ spoons
  • Dried Chamomile - ½ spoons
  • Mild Chili Spice - 3 pieces
  • Fatty Beef - 1.1 oz
  • Cilantro - 1 bunch

Step by Step guide

Step 1

Place the tongue in a large pot of salted water, add a peeled head of onion and 3 cloves of garlic. Bring to a boil and then reduce the heat to low. Add bay leaf, marjoram, and thyme. Simmer until fully cooked, about 2 to 4 hours depending on the size of the tongue.

Step 2

Transfer the tongue to a cutting board, skim the fat off the surface of the broth, and strain about 2 cups through a sieve. Remove the skin from the tongue and slice it thinly.

Step 3

Preheat the oven grill and roast the chilies until black spots appear on their skin. Then remove them and place in a blender bowl, adding all the juices that collected in the baking tray. Blend until smooth.

Step 4

Reduce the oven temperature to 356°F. In a saucepan over medium heat, melt the beef fat. Add the chopped onion and sauté for 5 minutes, then add the crushed garlic and cook for another minute. Stir in the tomatillo paste and simmer for about 7 minutes, until the sauce thickens. Pour in the broth and add half of the chopped cilantro, mixing well, and simmer for 10 minutes. Season with salt.

Step 5

Place the slices of tongue on a baking tray and pour the sauce over them, cover, and put in the oven for 20–30 minutes. Before serving, sprinkle with the remaining cilantro.
