- Cardamom - 0 oz
- Star anise - 0.2 oz
- Green peppercorns - 0.2 oz
- Champagne Vinegar - 4 fl oz
- Mayonnaise - 7.1 oz
- Canned tuna in its own juice - 4.8 oz
- Anchovies - 0.4 oz
- Capers - 0.4 oz
- White Balsamic Cream - 0.4 oz
- Arugula - to taste
- Basil - to taste

- Ground Black Pepper - to taste
Step by Step guide
Step 1
Place the peppers in an oven preheated to 180–392°F for 15–20 minutes. Once cooked, remove the peppers from the oven, cover them with foil, and let them cool. After that, peel off the skin.
Step 2
Prepare the marinade. Combine sugar with hot water to create a syrup. Add cardamom, star anise, and black pepper to the hot syrup, then pour in white wine vinegar.
Step 3
Pour the marinade over the peppers and let them sit for 3–4 hours.
Step 4
Prepare the sauce. Place the tuna, anchovies, and capers in a bowl, and add black pepper to taste. Blend until smooth.
Step 5
Mix together. Combine with chilled olive oil, homemade mayonnaise, and balsamic cream.
Step 6
Assemble the dish: arrange the peppers on a plate in a random order. Drizzle with sauce. Top with a few drops of olive oil and garnish with arugula, basil, and capers.
