Description
Thanks to pectin, the apple jam truly looks transparent, like melted butter, but, of course, contains minimal sugar and not a gram of fat. It is made by long simmering (at least three times) apple slices with cornelian cherries, which are currently in peak season. The cherries nestle within the depths of the jam as neat red beads. The most challenging part of the recipe is removing the pits from the cherries. However, the reward is a healthy sweetness and a jar full of vitamin C.
Ingredients
- Cornelian Cherry - 24.7 oz
- Apple - 4 lbs
- Sugar - 4 lbs
- Ginger - 2.5 oz
- Oranges - 1 piece
- Lemon - 1 piece
Step by Step guide
Step 1
Cut the apples in half, remove the core with the seeds, and slice them into wedges.
Step 2
Cut the cornelian cherries in half and remove the pits.
Step 3
Slice the orange into half-moons and the lemon into rounds.
Step 4
Grate the ginger using a fine grater.
Step 5
Mix the apples, orange, and cornelian cherries, then sprinkle with sugar. Let it sit for a couple of hours until the sugar dissolves.
Step 6
Place over heat, bring to a boil, and cook for 7 minutes. Then remove from heat, allow to cool, and let steep for 12 hours.
Step 7
Continue cooking the jam in two stages: bring it to a boil, simmer for 7 minutes, then let it cool and infuse.
Step 8
When the jam has cooled for the third time, pour it into sterilized jars and seal them tightly with lids.
