You can use any berries, as long as they are soft.

Ingredients

  • Lemon - 1 piece
  • Orange zest - 1 piece
  • Grated Ginger Root - 1 tablespoon
  • Cinnamon - 1 piece
  • Pepper Vodka - 3 fl oz
  • Cardamom - 6 pieces
  • Ground clove - 2 pieces
  • Red Grape Juice - 25 fl oz
  • Sugar - 5.3 oz
  • Gelatin - 0.9 oz
  • Strawberry - 4 pieces
  • Fresh Berries - 4 tablespoons
  • Raspberry leaves - 4 tablespoons
  • Cream (40%) - 17 fl oz
  • Custard - 14.1 oz
  • Vanilla extract - 1 teaspoon
  • Chopped almonds - to taste
  • Red port - 7 fl oz

Step by Step guide

Step 1

Grate the zest of the lemon and orange using a fine grater.

Step 2

In a saucepan, combine the lemon and orange zests, ginger, cinnamon, cloves, vanilla vodka, cardamom, port wine, red wine, and sugar. Heat gently, but do not let it boil.

Step 3

Strain the mulled wine through a sieve into a large bowl and add the gelatin. Stir until completely dissolved.

Step 4

Divide the berries among 12 dessert cups and pour the mulled wine mixture into each cup, filling them one-third full. Chill overnight to set.

Step 5

In a large bowl, whip the cream to stiff peaks.

Step 6

In a bowl, mix half of the whipped cream with the custard and vanilla. Spoon this mixture into the 12 dessert cups over the jelly.

Step 7

Top with the remaining whipped cream and sprinkle with almond flakes.
