Description
Trout is baked with herbs and leeks in a salt crust, making it very tender and juicy. This method can also be used to bake other fish, such as seabass. This recipe was shared with us by a chef from a popular American seafood restaurant.
Ingredients
- Golden Trout - 8.5 oz
- Ocean salt - 28.2 oz
- Lemon - 1 piece
- Leek - 3.5 oz
- Dill - 0.2 oz
- Spinach - 0.9 oz
- Parsley - 0.2 oz
- Thyme - 0 oz
- Water - 2 fl oz
Step by Step guide
Step 1
Add 70 ml of water and the zest of one lemon to the salt.
Step 2
Spread 1/3 of the salt evenly on the tray.
Step 3
Blanch the leeks and cool them in cold water. Then, cut them into two parts.
Step 4
Place one portion of the leek on top of a layer of salt, then add the fillet of trout. Arrange thin slices of lemon on top of the trout.
Step 5
Surround the fish on all sides with herbs: dill, parsley, and thyme.
Step 6
Place the spinach on top of the herbs and cover everything with the second part of the leek, ensuring the trout is shielded from direct contact with the salt. Then, spread 2/3 of the salt on top.
Step 7
Bake in the oven at 356°F for 17–20 minutes.
Step 8
You can serve boiled vegetables, mixed salad, and add a citronette dressing as a garnish.
