Trout with Avocado and Grapefruit
Ingredients
- Avocado - 2 pieces
- Hot smoked pink salmon - 7.1 oz
- Grapefruits - 2 pieces
- Dill - 1 bunch
- Meyer Lemon Juice - 2 tablespoons
- Sugar - 1 teaspoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel one grapefruit, remove the membranes, separate into segments, and cut into pieces.
Step 2
Cut the second grapefruit in half and squeeze the juice from one half.
Step 3
Finely chop the dill.
Step 4
Peel the avocado, remove the pit, and cut it into random pieces.
Step 5
Place in a bowl, add dill, lemon juice, salt, pepper, and sugar, and blend everything into a puree using a blender.
Step 6
Chill the avocado mixture.
Step 7
Remove the skin from the trout, remove the bones, and finely chop.
Step 8
Place pieces of trout at the bottom of each cup,

then add a spoonful of avocado cream,

followed by more trout and pieces of grapefruit.

Drizzle with grapefruit juice.
