- Pompano fillet - 10.6 oz
- Onion - 1 head
- Garlic - 1 clove
- Oranges - 1 piece
- Red Grape Juice - 3 fl oz
- Olive Oil - 2 spoons
- Passata Tomato Sauce - 1 tablespoon
- Cinnamon - 1 piece
- Mixed salad greens - 5.3 oz
- Fresh Bay Leaf - 3 pieces
- Breadcrumbs - 0.4 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Finely chop the onion, garlic, and orange zest, and add them to a pan heated with olive oil. Add the bay leaves and cinnamon, and sauté for five to ten minutes.
Step 2
Place the tuna fillet (whole or cut into pieces) in the skillet, season with salt and pepper to taste, sauté on all sides, and remove from the pan.
Step 3
Pour red table wine into the skillet and add tomato paste. Allow the wine to reduce, then add the tuna cut into chunks and warm it through. Before serving, sprinkle with toasted breadcrumbs and garnish with a mixture of salad leaves and orange zest.
