- Pompano fillet - 14.1 oz
- Quail Egg - 4 pieces
- Olive Oil - 4 fl oz
- Lime Juice - 1 fl oz
- Ginger - 1.2 oz
- Honey - 1.4 oz
- Fish Oil - 2 fl oz
- Sesame Oil - 1 fl oz
- Garlic - 0.4 oz
- Scallions - 0.5 oz
- Ground coriander - 0.5 oz
Step by Step guide
Step 1
Cut the tuna fillet into cubes, add salt and pepper.
Step 2
Mix with quail eggs and part of the sauce.
Step 3
Place in a metal mold and refrigerate until serving.
Step 4
For the sauce, peel the ginger and garlic, finely chop, and combine with the remaining ingredients, mixing well.
Step 5
Plate and decorate the dish as shown in the photograph.
