Ingredients
- Tuna - 10.6 oz
- Olive Oil - 3 fl oz
- Daikon - 4.2 oz
- Sugar - 0.9 oz
- Rice Vinegar for Sushi - 1 fl oz
- Habanero Pepper - 5.3 oz
- Shallot - 1.4 oz
- Meyer Lemon Juice - 1 fl oz
- Chives - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Coat the tuna fillet well in ground black pepper and sear it in olive oil on all sides, making sure to keep the inside of the tuna pink.
Step 2
Cut the daikon into long noodle-like strips using a Chinese grater, mix it with thinly sliced chili pepper, and combine with rice vinegar and sugar; if possible, let the noodles marinate.
Step 3
For the jalapeño sauce, combine all ingredients in a blender and blend until smooth.
Step 4
Plate and decorate the dish as shown in the photograph.
