Ingredients
- Turkey - 2 lbs
- Vegetable Oil - 1 fl oz
- Apple juice with pulp - 5 fl oz
- 10% cream - 2 fl oz
- Paprika - 1.8 oz
- Smoked salt - 0.7 oz
- Cilantro - 2 spoons
- Green peppercorns - 2 spoons
- Star anise - 5 pieces
- Sugar - to taste
- Salt - to taste
Step by Step guide
Step 1
Prepare the marinade. In a pot, combine apple juice, salt, sugar, coriander seeds, star anise, and pepper. Bring to a boil and reduce by half. Add cream, mix well, and let it cool.
Step 2
Pierce the chicken breast with a tenderizer, place it in the marinade, and let it rest in the refrigerator overnight.
Step 3
In a bag, mix all the paprika and salt. Pat the chicken breast dry with a paper towel, brush it with vegetable oil, place it in the bag, and coat it with the spices. Refrigerate for one hour.
Step 4
Preheat the oven to 482°F, place the meat on a baking sheet, and roast for twenty minutes.
Step 5
Let the cooked breast cool, slice it thinly, and serve with whole grain bread.
