Ingredients
- Chicken fillet - 1 piece
- Onion - 1 head
- Carrot - 1 piece
- Celery stalk - 1 piece
- Olive Oil - to taste
- Ocean salt - to taste
- Ground Black Pepper - to taste
- Dry White Wine - to taste
Step by Step guide
Step 1
Peel the carrot and cut it into small cubes; also dice the onion. Remove the leaves from the celery stalk and chop them; cut the stalk into small pieces.
Step 2
In a saucepan over medium heat, heat some olive oil and sauté the carrot, onion, and celery until they start to brown, about 15 minutes. Add 3 tablespoons of water, reduce the heat, and cook covered for 5 minutes. Add the chopped greens and season to taste.
Step 3
While the filling is cooking, prepare the fillet: place it on a work surface and make a cut along the side, not going all the way through. Open the fillet like a book and pound it flat. Sprinkle with salt and pepper, drizzle with white wine, and rub the marinade into the meat. Let it sit for 10 minutes.
Step 4
Transfer the fillet to a sheet of foil or plastic wrap. Place the cooked vegetables on top and roll it up. Place the roll seam side down in a shallow baking dish and brush with olive oil. Bake in a preheated oven at 356°F (350 degrees Fahrenheit) for 30 minutes. Let it rest for 5-10 minutes at room temperature and slice into thick pieces.
