Tury with Cherry Tomatoes
Ingredients
- Onion - 1 head
- Celery stalk - 1 stalk
- Carrot - 1 piece
- Garlic - 4 cloves
- Olive Oil - 3 fl oz
- Tomatoes - 21.2 oz
- Cherry Tomatoes - 8 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Stale White Bread - 14.1 oz
- Basil - 1 bunch
- Sage leaves - 4 pieces
Step by Step guide
Step 1
Finely chop the onion, celery, carrot, and garlic, and sauté them in a saucepan with olive oil. Add the halved tomatoes (previously peeled and seeded). Season with salt and pepper, and simmer for 20 minutes.
Step 2
Sauté the diced stale bread and add it to the tomatoes. Then pour in water (750 ml), crumble the basil and sage, mix well, and simmer for another 5 minutes.
Step 3
The tury should not be too liquid like soup, nor too thick. This can be adjusted by adding the right amount of water. Serve the tury in deep plates, drizzled with a little olive oil.
