Description
Tuscan Tomato Soup
Ingredients
- Basil - 1 bunch
- Cherry Tomatoes - 8.8 oz
- Garlic - 2 cloves
- Rye Bread - 8.8 oz
- Canned tomatoes - 17.6 oz
- Olive Oil - 2 tablespoons
- Ground Black Pepper - a pinch
- Salt - a pinch
Step by Step guide
Step 1
Slice the basil leaves.
Step 2
Next, cut the cherry tomatoes in half.
Step 3
Peel the garlic cloves and chop them.
Step 4
Add olive oil to a hot pot, then add the chopped garlic and stir for a few minutes. Once the garlic starts to color (brown), add the cherry tomatoes and sliced basil.
Step 5
Increase the stove temperature to high and cook the tomato mixture for 5 to 7 minutes, stirring occasionally until everything is soft and sticky.
Step 6
Trim the crust off the bread and tear the crumb into small pieces.
Step 7
Add the canned tomatoes to the sautéed tomato mixture. Mix everything well to prevent anything from sticking to the bottom of the pot and bring to a boil.
Step 8
Pour hot drinking water into the empty tomato can and pour it into the pot. Add the bread pieces, drizzle with olive oil, and stir. Then continue cooking on low heat.
Step 9
Stir the soup occasionally. When you have a smooth, velvety texture and the bread is completely softened, it means everything is ready.
Step 10
Taste for salt and add a necessary pinch of salt and pepper, turn off the stove, and cover the pot with a lid.
