Tuscan Tomato Soup with Beans
Ingredients
- Olive Oil - 2 spoons
- Onion - 1 head
- Celery stalk - 2 pieces
- Garlic - 2 cloves
- Chicken Broth - 1 qt
- White Beans - 28.9 oz
- Parsley - ½ bunches
- Crushed Tomatoes in Their Own Juice - 14.1 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Heat olive oil in a pot and add finely chopped onion and celery. Sauté for 7 minutes until softened. Add minced garlic and broth, bring to a boil, partially cover with a lid, reduce the heat, and simmer for 15 minutes until the vegetables are tender.
Step 2
Drain the beans and rinse them under cold water. Add them to the soup along with the tomatoes. Season with salt and pepper, and stir in the chopped parsley. Cook for another 5 minutes.
