Ingredients
- Turnips - 17.6 oz
- New Potatoes - 2 lbs
- Pitted Wild Apricots - 6 oz
- Dried Apricots - 4.9 oz
- Orange juice concentrate - 2 fl oz
- Meyer Lemon Juice - 2 tablespoons
- Honey - 2½ tablespoons
- Ground Cinnamon - 1 teaspoon
- Salt - ¼ teaspoon
- Citrus Zest Mix - 2½ teaspoons
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Peel the carrots and cut them into small rounds.
Step 3
Bring water to a boil in a pot, add the sweet potatoes unpeeled, and cook for 10 minutes. Then add the carrots and cook for another 10 minutes. Drain and let cool slightly.
Step 4
Peel the sweet potatoes and cut them into small pieces. Transfer to a bowl and add the carrots.
Step 5
Add the remaining ingredients to the vegetables (you can chop them slightly). Mix and place in a baking dish.
Step 6
Cover with foil and bake in the oven for 30 minutes, stirring occasionally. Serve immediately.
