Description

Borscht is prepared in a large pot (about 3 liters). Borscht tastes best: - with black bread. Ideally, rub the crust with fresh garlic. - with sour cream - red pepper - fresh herbs (dill, parsley) Add everything to the bowl to taste. That's it! Enjoy your meal!

Ingredients

  • Beef - 17.6 oz
  • White Cabbage - 7.1 oz
  • Salad Potatoes - 2 pieces
  • Sauerkraut - 5.3 oz
  • Onion - 1 head
  • Tomatoes - 2 pieces
  • Carrot - 1 piece
  • Orange Bell Peppers - 1 piece
  • Salt - to taste
  • Passata Tomato Sauce - 2.5 oz
  • Ground Black Pepper - to taste
  • Herbs - 1 bunch
  • Minced garlic - 1 clove
  • Bay leaf - 1 piece
  • Mild Chili Spice - to taste
  • Sour Cream - 1 tablespoon
  • Vegetable Oil - 1 tablespoon

Step by Step guide

Step 1

In boiling water, add the meat (beef brisket or beef for broth — wash it first and cut into large pieces).

Step 2

Once the water with the meat has boiled, reduce the heat. Remove any foam that forms. Cook on moderate heat for 15 minutes.

Step 3

Pour out 1 cup of the resulting broth from the pot (do not pour it down the sink — we will need it later). This is necessary because the soup will evaporate during cooking, and we will need to restore the balance of liquid and ingredients.

Step 4

At the same time, start chopping the vegetables for frying: chop 1 onion, tomatoes, and bell pepper (all separately and finely). Grate 1 carrot on a coarse grater.

Step 5

Add the chopped sauerkraut to the broth. It will add a slight sourness, but it can be omitted. Stir. Cook for 15 minutes.

Step 6

At the same time, start frying the vegetables (see below).

Step 7

Add the shredded fresh cabbage. Stir. Cook for 10 minutes.

Step 8

Add the diced potatoes. Stir. Cook for 15 minutes.

Step 9

Add the fried vegetables to the broth. Stir. Cook for 2–3 minutes.

Step 10

Add the previously poured broth, salt, black pepper to taste, garlic (fresh, finely chopped), dill, parsley, and bay leaf. Cook for 10 minutes, increasing the heat (bring to a boil), then remove from heat.

Step 11

To prepare the fried vegetables, add 1 tablespoon of vegetable oil to the pan. Heat it up.

Step 12

Add the onion. Fry until golden, stirring, over moderate heat. About 5 minutes.

Step 13

Push the onion to the side of the pan. Add the carrot. Fry, stirring, for 5 minutes.

Step 14

Combine the carrot and onion. Fry, adding 2 tablespoons of water, for 3 minutes.

Step 15

Add the tomatoes and pepper, and the tomato paste (preferably Finnish, in a small jar). Simmer on low heat for 10–15 minutes.
