Description
If you are using fresh peaches, boil them in sugar syrup beforehand and peel them.
Ingredients
- Arborio rice - 13.2 oz
- Butter - 6 tablespoons
- Milk - 1 qt
- Vanilla salt - 2 tablespoons
- White Chocolate - 3.5 oz
- Liquid dark chocolate - 3.5 oz
- Apple Wine - 1 cup
- Donut Peaches - 4 pieces
- Mint Leaves - 6 pieces
Step by Step guide
Step 1
Heat the milk and keep it warm on the stove.
Step 2
Melt 4 tablespoons of butter in a pan and sauté the rice until translucent. Pour in the wine and let it evaporate. Start adding the milk one ladle at a time (do not add the next portion until the previous one is absorbed by the rice). After 15 minutes of cooking, add the vanilla sugar and taste the rice: it usually takes about 17 minutes to reach al dente. Once the rice has the desired texture, remove the pan from heat, add the remaining butter and grated white chocolate. Cover with a lid and let it sit for a few minutes.
Step 3
To serve, plate the risotto, sprinkle with chopped chocolate, pressing pieces into the warm rice. Garnish with peach slices and mint leaves.
