  • Veal Brains - 2 lbs
  • Butter - 1.8 oz
  • Spanish onions - 2 heads
  • Gruyère cheese - 1.8 oz
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Boil the calf's brains in salted water over the lowest heat for ten minutes, then remove the membranes.

Step 2

In a skillet, sauté the onion in butter until soft, then add the brains, stir, and cook for five minutes, stirring occasionally. Remove from heat, sprinkle with grated cheese, season with pepper, and place in an oven preheated to 392°F until the cheese is melted.

Step 3

Serve as a spread for bread or with mashed potatoes.
