Description
To easily peel the skin off tomatoes, you need to dip them in boiling water for a few seconds, then rinse them with cold water, make a cross-shaped incision on top, and remove the skin like petals. If you want to prepare the dish without oil, steam the vegetables.
Ingredients
- Water - 40 fl oz
- White Beans - 5.3 oz
- Onion - 3 pieces
- Celery - 1 piece
- Carrot - 2 pieces
- Bell pepper - 2 pieces
- Red Chili Pepper - 1 piece
- Tomatoes - 4 pieces
- Parsley - 1.4 oz
- Pitted olives - 3.5 oz
- Vegetable Oil - 2 fl oz
- Salt - to taste
Step by Step guide
Step 1
Soak the beans for 12 hours. After that, rinse them and boil for 30 minutes. Drain and set aside.
Step 2
Then sauté the finely chopped onion, celery (cut into small pieces), carrot (diced), and pepper (cut into squares) in oil for 7 minutes. Add the boiled beans. Sauté for 3 minutes, stirring constantly. Add finely chopped peeled tomatoes (you can blend them), and bring to a boil.
Step 3
Then pour in hot water and simmer on low heat for 1 hour. Turn off the heat.
Step 4
Add salt for the first time.
Step 5
Add olives (cut in half) and parsley.
