- Yellow Beets - 1 piece
- Onion - 1 piece
- White Cabbage - 1 head
- Garlic - 3 cloves
- Tomatoes - 2 pieces
- Orange Bell Peppers - 1 piece
- Ground Black Pepper - to taste
- Bay leaf - 2 pieces
- Sugar - 0.4 oz
- Herbs - to taste

Step by Step guide
Step 1
First and foremost, for preparing the vegan borscht, you need to deal with the beans. They should be soaked in water in advance (preferably overnight). However, three to four hours will suffice. If you don't have time to soak the beans, you can substitute them with canned beans.
Step 2
So, place the soaked beans in a pot on the stove and bring them to a boil. Then reduce the heat.
Step 3
Peel the potatoes and wash them thoroughly. After that, cut them into small pieces. Then add the potatoes to the pot with the bean broth.
Step 4
Now let's prepare the beets. They also need to be peeled and washed well. After that, cut the beets into strips and sauté them in a small amount of vegetable oil (this is necessary so that during further cooking, the beets do not lose their color).
Step 5
After a few minutes of frying, add the sautéed beets to the pot with the beans.
Step 6
At this stage, let's prepare the onion. Before adding it to the pot, it should be finely chopped and sautéed in a pan (until it becomes translucent).
Step 7
Once the onion has gained some transparency, add the carrot, previously cut into strips.
Step 8
While the sauté is cooking in the pan, let's deal with the tomatoes. They need to be cut into small pieces (you can peel them beforehand, but this is not necessary).
Step 9
As soon as we finish with the tomatoes, we can remove the sauté from the heat, and then we will add it to our vegan borscht.
Step 10
Now sauté the chopped tomatoes, adding finely chopped garlic.
Step 11
Meanwhile, while the tomatoes are cooking in the pan, we will shred the cabbage and then add it to the borscht.
Step 12
Now it's time for the bell pepper. It should be cut into medium-sized strips and then added to the pot.
Step 13
While we were busy with the cabbage and pepper, the tomatoes have softened well in the pan and absorbed the garlic aroma. Now we will add a bit of ketchup or tomato paste (according to preference), some hot dried pepper, and simmer everything for a couple more minutes.
Step 14
Now the tomato mixture can be confidently added to our borscht.
Step 15
At this stage, the borscht should be stirred and salted (in this case, black salt was used, but generally, it's not crucial).
Step 16
Sprinkle the borscht with herbs, and also add some peppercorns and bay leaves.
Step 17
Add a couple of pieces of sugar to our dish. After that, let it simmer for a couple more minutes, and then you can turn off the heat. Let the vegan borscht steep for at least an hour.
