Vegan Lentil Puree Soup
Ingredients
- Lentils - 10.6 oz
- Onion - 1 head
- Garlic - 2 cloves
- Olive Oil - 3 tablespoons
- Mustard Greens - 1 teaspoon
- Black Cumin (Cumin) - 1 teaspoon
- Toasted Cumin Seeds - 1 teaspoon
- Parsley - to taste
- Salt - to taste
- Chicken Broth - 1 qt
Step by Step guide
Step 1
In a skillet, heat the olive oil, add the spices (mustard seeds, cumin seeds, and cumin). Sauté lightly.
Step 2
Add finely chopped garlic, onion, and grated carrot. Cook until slightly golden.
Step 3
Pour the rinsed lentils with vegetable broth or warm water and cook for about 8–10 minutes.
Step 4
Add the vegetable and spice mixture to the lentils and cook for another 5–7 minutes.
Step 5
Blend until smooth.
Step 6
When serving, add chopped parsley. Croutons can be added.
