Vegetable Appetizer
Ingredients
- Courgette - 2 pieces
- Eggplants - 2 pieces
- Orange Bell Peppers - 2 pieces
- Carrot - 2 pieces
- Onion - 2 heads
- Garlic - 6 cloves
- Water - 4 fl oz
- 9% Vinegar - 4 fl oz
- Sugar - 3.5 oz
- Vegetable Oil - 2 fl oz
- Salt - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Slice the zucchini into 1 cm thick rounds, cut large ones in half.
Step 3
Slice the eggplants in the same way as the zucchini.
Step 4
Remove seeds from the bell pepper and cut it into strips.
Step 5
Peel the carrot and cut it into sticks.
Step 6
Peel the onion, cut it in half, and chop it into large cubes.
Step 7
Pour vegetable oil into a frying pan, fry the zucchini on one side, and transfer to a bowl.
Step 8
Fry the eggplants on both sides and transfer to another bowl.
Step 9
Fry the onion until translucent for 4 minutes.
Step 10
Add the carrot to the onion, stir, and fry for another 4 minutes.
Step 11
Add the bell pepper and fry until the pepper becomes softer.
Step 12
Finely chop the garlic.
Step 13
Layer the vegetables: zucchini, eggplants, onion, carrot, pepper. Season each layer with salt, pepper, and sprinkle with garlic.

Prepare the marinade: add sugar to water, bring to a boil and dissolve the sugar, remove from heat, and add vinegar.
Step 15
Pour the marinade over the vegetables.
Step 16
Cover the vegetable appetizer with a plate, press down on the vegetables, let cool at room temperature, and refrigerate overnight.
Step 17
Serve as a cold appetizer.
