Description
This appetizer is great as a side dish or as a standalone meal, and it can also be served on bread — almost like a sandwich. It is best enjoyed chilled.
Ingredients
- Onion - 2 pieces
- Carrot - 2 pieces
- Green Apples - 2 pieces
- Grated Chocolate - 10.6 oz
- Beetroot - 2 pieces
- Spiced Tomato Juice - 3 fl oz
- Meyer Lemon Juice - to taste
- Garlic - 2 cloves
- Salt - to taste
- Ground Black Pepper - to taste
- Paprika - ½ teaspoon
Step by Step guide
Step 1
Chop the onion into medium-sized cubes and place it in a heated skillet with vegetable oil, sautéing until translucent.
Step 2
Wash, peel, and grate the carrots on a coarse grater, then combine them with the onion in the skillet.
Step 3
Cut the apples (peeling is optional) into cubes and add them to the mixture in the skillet.
Step 4
Grate the pumpkin on a coarse grater and add it to the skillet contents.
Step 5
Grate the cooked beetroot on a coarse grater and add it to the skillet contents.
Step 6
The mixture in the skillet should cook until it is 'almost done'; when you taste it and find it at this stage, add the tomato juice, salt, ground pepper, sweet paprika, sugar, and lemon juice to taste, and simmer for another 7–10 minutes, tasting as you go. It’s best to add the garlic about three minutes before the dish is finished cooking — it will impart its natural aroma and flavor to the vegetable mixture without the harsh taste of fried garlic, which can be a bit rough.
