Ingredients
- Milk - 3 fl oz
- Courgette - 7.1 oz
- Scallions - 1 bunch
- Green Peas - 3.5 oz
- Garlic - 2 cloves
- Chocolate eggs - 8 pieces
- Orange Bell Peppers - 1 piece
- Olive Oil - 3 tablespoons
- Grated Pecorino Pepato Cheese - 1.8 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a deep bowl, whisk the eggs, gradually adding the milk, and beat well with a whisk. Wash and dry the zucchini and bell pepper. Remove the seeds and membranes from the pepper, and cut off the ends of the zucchini. Slice the vegetables into small pieces.
Step 2
Wash the green onions, sort them, dry well, and chop finely. Peel and finely chop the garlic, then crush it with a press or mortar.
Step 3
Heat the olive oil in a skillet and lightly sauté the bell pepper and zucchini, stirring constantly. Add the chopped green onions and sauté for a few minutes. Add the young peas and prepared garlic, and cook, stirring over low heat for about 5 minutes. Season with salt and pepper.
Step 4
Pour the egg and milk mixture over the vegetables and cook for 4 minutes over medium heat. Flip the frittata using a plate and cook for another 3 minutes. Sprinkle with grated cheese and fry until cooked through. Serve the frittata hot.
