Ingredients
- Butter - 0.9 oz
- Leek - 1 piece
- Garlic - 1 clove
- Courgette - 2 pieces
- Celery stalk - 2 pieces
- Chicken Broth - 1 qt
- Frozen green bean pods - 5.3 oz
- White Cabbage - 7.9 oz
- Parsley - 1 bunch
- French Baguette - 1 piece
- Cheshire Cheese - 1.4 oz
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Melt the butter in a pot over medium heat. Add the finely chopped leek and cook, stirring, for 5-6 minutes until soft, without browning. Add the minced garlic, finely chopped zucchini, and finely chopped celery. Cook, stirring, for another 5 minutes.
Step 2
Pour in the hot broth, bring to a boil, reduce the heat, and simmer for 15 minutes.
Step 3
Meanwhile, cut the stems off the cabbage and shred the leaves. Add to the soup along with the peas and cook for 10 minutes until the vegetables are tender.
Step 4
Add the parsley, season with salt and pepper. Ladle into small bowls and sprinkle with grated cheddar and freshly ground pepper. Serve with pieces of baguette.
