Description

Ingredients
- Beetroot - 1 piece
- Courgette - ½ pieces
- Avocado - 1 piece
- Parsley - 3.5 oz
- Water - 2 spoons
- Meyer Lemon Juice - 2 spoons
- Ocean salt - to taste
- Toasted Sesame - 1 tablespoon
Step by Step guide
Step 1
Boil one medium-sized beet, let it cool, peel it, and slice it into even thin rounds.
Step 2
Peel half a zucchini equivalent in size to a beetroot and slice it into even, thin pieces.
Step 3
Place the peeled avocado, parsley, lemon juice, salt to taste, a little water, and blend until smooth and creamy.
Step 4
Place a circle of beetroot on a serving plate and spread cream on top, then add a circle of zucchini and spread cream again. Continue layering as many levels as you like.
Step 5
Garnish with herbs and sesame seeds.
