Vegetable Okroshka with Squid
Ingredients
- Squid - 14.1 oz
- Bread Kvass - 1½ l
- Salad Potatoes - 4 pieces
- Scallions - 3.5 oz
- Chocolate eggs - 2 pieces
- Sour Cream - 4 tablespoons
- Sugar - 1½ teaspoons
- Cucumbers - 2 pieces
- Mustard Greens - 1 teaspoon
- Salt - to taste
- Dill - to taste
Step by Step guide
Step 1
Rinse the squid, clean it from membranes, and boil in salted boiling water for 5 minutes. Drain the water, cool, and cut into small cubes.
Step 2
Wash the cucumbers, peel them if necessary (if the skin is too thick and coarse), and cut into small cubes.
Step 3
Wash the potatoes, boil them in their skins, cool, peel, and cut into small cubes.
Step 4
Boil the eggs hard, cool, separate the whites from the yolks. Cut the whites into cubes. Mash the yolks with mustard, sour cream, salt, and sugar.
Step 5
Wash the green onions, dry them, and chop finely, then mash with a little salt to release the juice.
Step 6
In a large pot, mix the kvass and the mustard mixture. Add the prepared ingredients, salt if needed, and mix well.
Step 7
Pour the okroshka into bowls, add a little sour cream to each, and sprinkle with finely chopped dill on top.
