Vegetable Pie with Parmesan

Ingredients

  • Spinach - 8.8 oz
  • Butternut Squash - 17.6 oz
  • Carrot - 17.6 oz
  • Leek - 17.6 oz
  • Potato - 8.8 oz
  • Grated Pecorino Pepato Cheese - 4.4 oz
  • Orange juice concentrate - 8 fl oz
  • Cheshire Cheese - 4.2 oz
  • Orange zest - 4 tablespoons
  • Chicken Broth - 8 fl oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Grated Ginger Root - 0.2 oz
  • Breadcrumbs - 1.1 oz
  • Butter - 1.1 oz

Step by Step guide

Step 1

Wash the vegetables well and slice them very thinly. Layer 1 layer of vegetables in a greased baking dish. Sprinkle with cheese. Repeat layers several times. Preheat the oven to 356°F.

Step 2

Pour orange juice and broth on top, and sprinkle with orange zest, salt, and pepper. Top with the remaining cheese and ginger. Cover with foil and place in the oven for 1.5 hours.

Step 3

Remove the foil, sprinkle with breadcrumbs, and place a few pieces of butter on top. Put under the broiler until golden brown. Serve immediately.
