Description

This is a dietary soup suitable for people on a therapeutic diet and for children.

Ingredients

  • Potato - 17.6 oz
  • Cauliflower - 1 head
  • Carrot - 1 piece
  • Celery stalk - 2 pieces
  • Yellow onion - 1 piece
  • Quail Egg - 8 pieces
  • Water - 1 qt
  • Salt - 1 teaspoon
  • Olive Oil - to taste

Step by Step guide

Step 1

Wash and peel all the vegetables.

Step 2

Cut the potato, carrot, and celery into large pieces.

Step 3

Place all the vegetables in water and cook for one hour on low heat in a pot or in a slow cooker on the 'soup' setting.

Step 4

When the vegetables are ready, remove the onion and puree the soup with a blender.

Step 5

When serving, add quail eggs, croutons, herbs, boiled broccoli, black pepper, and olive oil to taste.
