Ingredients
- Dried Nori Seaweed - 6 pieces
- Lemon Juice - 1 tablespoon
- Cauliflower - ½ head
- Avocado - 2 pieces
- Cucumbers - 2 pieces
- Carrot - 1 piece
- Bell pepper - 1 piece
- Lettuce - 1 bunch
- Sunflower Sprouts - 1 tablespoon
- Cilantro - ½ bunch
Step by Step guide
Step 1
For the 'rice': break the cauliflower into florets, add a bit of lemon juice and lightly pulse in a food processor until the size of rice grains.
Step 2
Slice the cucumbers and carrot into thin strips using a mandoline.
Step 3
Cut the avocado and bell pepper into long slices.
Step 4
On a sheet of nori (on the nearest 1/3 of the sheet), place the lettuce leaves, 'rice', cucumbers, carrot, avocado, pepper, and herbs (I used either cilantro or sprouts). Roll it up and slice with a sharp knife.
