Ingredients
- Eggplants - 3 pieces
- Tomatoes - 2 pieces
- Orange Bell Peppers - 2 pieces
- Mild Chili Spice - 1 piece
- Garlic - 5 cloves
- Dill - 1.8 oz
- Cilantro - 1.8 oz
- Parsley - 1.8 oz
- Basil - 1.8 oz
- Vegetable Oil - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Preheat the oven to 392°F. Line a baking tray with a silicone mat or parchment paper.
Step 3
Wash and dry the tomatoes, eggplants, and peppers with a paper towel. Make a cross-cut on the tomatoes.
Step 4
Remove the stems from the eggplants and poke them with a fork.
Step 5
Place the vegetables on the baking tray and put them in the oven for 30 minutes. Flip the eggplants and peppers after 15 minutes.
Step 6
Turn off the oven, place the peppers in a bag, tie it, and leave it to cool.
Step 7
Peel the eggplants and tomatoes and place them in a colander to drain excess juice.
Step 8
Wash the herbs, dry them, remove the tough stems, and chop finely.
Step 9
Peel the garlic and chop it finely (avoid using a press or grater).
Step 10
Peel the skin from the peppers, remove the seeds and stems.
Step 11
Peel the eggplants. Chop all the vegetables, add the herbs, garlic, vegetable oil, and season with salt and pepper to taste.
Step 12
The vegetable skewers are ready. They can be served as a side dish with meat or as a standalone dish.
