- Carrot - 3.5 oz
- Celery stalk - 3.5 oz
- Courgette - 3.5 oz
- Pumpkin - 3.5 oz
- Beef Shank - 1 piece
- Chinese green beans - 3.5 oz
- Olive Oil - 1 tablespoon
- Potato protein - 1 tablespoon
- Salt - to taste
Step by Step guide
Step 1
Wash, peel, and dice the carrot, celery, green beans, zucchini, and pumpkin — any vegetables you have on hand — so that you have a total of 500 grams.
Step 2
Pour 2 liters of water into a pot and add all the vegetables, beef shank, olive oil, and a pinch of salt. Bring to a boil, then reduce the heat and simmer for another 30 minutes until the vegetables are soft. Remember to skim off the foam.
Step 3
Mix the starch with two tablespoons of water to avoid lumps, add a bit of broth — stir well and add the mixture to the pot. Stir and cook for another 5 minutes.
Step 4
Remove the beef shank, add salt if needed, and serve: the soup can be garnished with fresh herbs.
