Ingredients
- Chicken Broth - 1¼ l
- Broccoli - 12.3 oz
- Courgette - 4 pieces
- Carrot - 8.8 oz
- Leek - 12.3 oz
- Sweet Pepper - 5.3 oz
- Wheat Flour - 1.2 oz
- Butter - 1.6 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Herbs - to taste
Step by Step guide
Step 1
Finely chop the leek. In a large pot, melt a piece of butter, add the leek, stir, and sauté over medium heat for 5 minutes until the leek becomes soft. Add the flour to the pot and, stirring, keep the mixture on the heat for another minute.
Step 2
Remove the mixture from the heat, and while stirring slowly and continuously, pour in the broth. Place the pot back on the heat and, stirring constantly, cook over high heat until the mixture comes to a boil and thickens.
Step 3
Add the chopped vegetables to the broth, season with salt if the broth is not salty enough, and cook for about 10 minutes, until the vegetables are tender. Before serving, sprinkle the soup with finely chopped herbs. This soup is best served with sour cream and whole grain bread.
