  • Olive Oil - 1 tablespoon
  • Red Onion - 4.2 oz
  • Garlic - 3 cloves
  • Ginger - 2 tablespoons
  • Chicken Broth - 8 cups
  • Red potato - 1 piece
  • Red Lentils - 2 cups
  • Carrots - 2 pieces
  • Spinach - 4.9 oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Natural non-fat yogurt - 3.5 oz
  • Chopped chives - 1 tablespoon

Step by Step guide

Step 1

In a small pot, heat the oil over medium heat.

Step 2

Add the onion and cook, stirring, until it becomes soft and light golden in color.

Step 3

In a separate bowl, mix the garlic and ginger. Add the potato, lentils, and carrots to the heated broth; bring to a boil and cook for about 15 minutes.
