Vegetarian Borscht with Tomato Paste
Ingredients
- Beetroot - 17.6 oz
- Carrot - 5.3 oz
- Onion - 5.3 oz
- White Cabbage - 10.6 oz
- Meyer Lemon Juice - 1 tablespoon
- Passata Tomato Sauce - 4.9 oz
- Sugar - 1 tablespoon
- Vegetable Oil - 2 tablespoons
- Salt - to taste
Step by Step guide
Step 1
Cut the beetroot and carrot into thin strips, and finely chop the onion and cabbage.
Step 2
In a deep skillet, heat the vegetable oil, add the vegetables (except for the cabbage), add lemon juice, tomato paste, sugar, salt, mix everything, and simmer, stirring occasionally.
Step 3
After 20 minutes, add the cabbage and continue to simmer everything together for another 15 minutes.
Step 4
In a pot, bring 1.5 liters of water to a boil, and transfer the contents of the skillet into the boiling water.
Step 5
Cook until the vegetables are fully cooked, adding more lemon juice and salt if necessary.
Step 6
Serve with sour cream.
