Description

You can add various spices to the burgers. You can use khmeli-suneli for a slightly Caucasian flavor. You can also add mustard, as peas pair very well with it. You can also replace eggplants with zucchini or mushrooms. Or add them all together for a delicious mix. I won't say much about vegetable variations in the sandwich — it's all up to your taste!

Ingredients

  • Ground Oats - 1 cup
  • Honey - 1½ tablespoons
  • Vegetable Oil - 3 tablespoons
  • Milk - 1 cup
  • Onion - 1 piece
  • Eggplants - ½ piece
  • Yellow Beets - ½ cup
  • Carrot - ½ piece
  • Mild Chili Spice - 1 piece
  • Black Cumin (Cumin) - ½ teaspoon
  • Yellow Mustard Seeds - 1 teaspoon
  • Star anise - ½ teaspoon
  • Chicken Egg - 1 piece
  • Eel - 1 bunch
  • Potato - 1 piece
  • Pickled Eggplant with Peppers - 4 pieces
  • Courgette - 1 piece
  • Mayonnaise - 4 teaspoons
  • White Balsamic Cream - 2 teaspoons
  • Turmeric - ½ teaspoon
  • Wheat Flour - 1 cup

Step by Step guide

Step 1

First, preheat the oven to 450°F (230°C). Grind the oats in a blender and mix them with flour, baking powder, and salt. Combine honey with a tablespoon of oil, then with milk. Mix both mixtures together. Roll the resulting dough into one large ball or several small ones to form buns, and place them in a baking dish (I ended up with one flatbread because my dough was a bit runny) and bake in the oven for 20 minutes.

Step 2

Soak the peas overnight. Change the water and boil for 20–30 minutes, ensuring they don't overcook. Drain the water and blend in a blender. Heat a pan over the fire and add a tablespoon of oil. Add mustard seeds, cumin, and star anise to the oil and sauté until they start to pop. Then add the onion and carrot, and sauté until the onion is translucent. Now add the eggplant and simmer until soft. Finally, add a bit of turmeric and fry for another half a minute.

Step 3

Mix the vegetables with the peas. Shape four patties (burgers), dip them in beaten egg, and fry for half a minute on each side.

Step 4

Cut the resulting flatbread into four parts and slice them open (if you made buns, just slice them open). Spread mayonnaise on the bottom half of the flatbread. Place half a leaf of lettuce, then a patty, followed by a couple of slices of cucumber, a bit of balsamic sauce, a couple of slices of tomato, a spicy pickled pepper, and cover with the second half of the bread. Don't forget to repeat this four times!
