Ingredients
- Olive Oil - 2 tablespoons
- Onion - 1 head
- Celery stalk - 2 pieces
- Carrot - 2 pieces
- Garlic - 2 cloves
- Vegetable Broth - 5 cups
- Potato - 15.9 oz
- Canned Diced Tomatoes - 14.1 oz
- Frozen Green Peas - 2.5 oz
- Salt - 1 teaspoon
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a heavy-bottomed pot, heat the oil over low heat. Finely chop the onion, celery, carrot, and garlic, add them to the pot, and sprinkle with salt. Stir, cover, and sauté for about 20 minutes, stirring occasionally, until the vegetables are soft. Thaw the peas.
Step 2
Peel the potato and cut it into small cubes. Drain the liquid from the tomatoes. Add the potato, tomatoes, and broth to the other vegetables and cook until the potato is soft, about 15 minutes.
Step 3
Remove the pot from heat, add the peas, and let it sit for 2 minutes. Then season with pepper and serve.
