Ingredients
- Green Lentils - 1 cup
- Carrot - 1 piece
- Onion - 1 head
- Vegetable Oil - 1 tablespoon
- Tomato Paste - 1 tablespoon
- Paprika - ½ teaspoon
- Turmeric - ½ teaspoon
- Herbes de Provence - 2 teaspoons
- Sugar - ½ teaspoon
- Lemon Juice - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
- Spinach - 1 bunch
- Water - 2 qt
Step by Step guide
Step 1
Bring 2.5 liters of water to a boil.
Step 2
Peel and dice the carrot and onion. Sauté in vegetable oil with the addition of tomato paste.
Step 3
Add the rinsed lentils, carrot, onion, salt, pepper, paprika, herbes de Provence, turmeric, and sugar to the boiling water. Cook for 30 minutes until the lentils are tender. After 30 minutes, add the lemon juice and stir. You can adjust the taste with sugar and lemon juice if needed.
Step 4
Serve the soup with spinach or parsley.
