Vegetarian Mushroom Solyanka

Ingredients

  • Salad Potatoes - 2 pieces
  • Onion - 1 head
  • Carrot - 1 piece
  • Orange Bell Peppers - 1 piece
  • Pickled Chanterelles - 8.8 oz
  • Pickles - 6 pieces
  • Olives stuffed with lemon - 10 pieces
  • Lemon - to taste
  • Passata Tomato Sauce - 4 tablespoons
  • Spices - to taste
  • White Cabbage - 12.3 oz

Step by Step guide

Step 1

Sauté the chopped carrot in a saucepan with sunflower oil and gradually add finely chopped onion, then bell pepper, mushrooms, pickles, and finally olives. Simmer for 7–10 minutes.

Step 2

Add diced potatoes and shredded cabbage. Pour in the tomato paste and 150 ml of water.

Step 3

Simmer for another 15 minutes, then add water and spices, along with a couple of lemon slices. Cook on low heat until the potatoes are done.
