Ingredients
- Chanterelles - 1.4 oz
- Potato - 1.8 oz
- Onion - 0.4 oz
- Carrot - 0.4 oz
- Olive Oil - 0 fl oz
- Spinach - 0.5 oz
- Tomatoes - 0.4 oz
- Sour cream (30%) - 1.1 oz
Step by Step guide
Step 1
Soak the chanterelles in cold water for 15-20 minutes.
Step 2
Dice the potato, cover with water (500 ml), and boil.
Step 3
Julienne the carrot and onion, add the chanterelles, and sauté in olive oil until cooked.
Step 4
Add the vegetable mixture to the potato and cook for an additional 5 minutes.
Step 5
Season to taste with salt and pepper.
Step 6
One minute before finishing, add torn spinach and diced tomatoes.
Step 7
Drizzle with olive oil and serve with sour cream.
