Ingredients
- Spinach - 14.1 oz
- Cottage cheese - 10.6 oz
- Goat cheese - 1.8 oz
- Semi-soft cream cheese - 3.5 oz
- Walnuts - 1.1 oz
- Wheat Flour - 3 tablespoons
- Herbs - 1.1 oz
- Ground Caraway - to taste
- Toasted Cumin Seeds - to taste
- Coriander essential oil - to taste
- Salt - to taste
- Olive Oil - 1 teaspoon
Step by Step guide
Step 1
Preheat the oven to 180–392°F.
Step 2
If using fresh spinach, sort it, remove the stems, and steam for about 5 minutes. If using frozen spinach, sauté covered in a small amount of water for 10 minutes. Drain in a colander, let it cool, and then squeeze out the excess liquid.
Step 3
Chop the cooled and squeezed spinach in a blender.
Step 4
Mix the chopped spinach with spices, salt, half of the cottage cheese, and flour.
Step 5
Spread the spinach mixture evenly on a baking sheet lined with parchment paper brushed with olive oil, forming a layer about 1 cm thick. Bake for 20 minutes. Remove the baking sheet and carefully flip the baked layer onto a prepared sheet of parchment paper or a large cutting board. Allow to cool slightly. Gently peel off the paper, using a spatula or flat knife if necessary to help the layer detach from the paper.
Step 6
Combine the remaining cottage cheese, chopped herbs, cream cheese, and goat cheese (you can replace the cottage cheese with cream cheese or use all cream cheese instead of goat cheese), and chopped walnuts.
Step 7
Evenly distribute the filling over the spinach base and roll it up (you can add sun-dried tomatoes to the filling if desired). Refrigerate for at least 30 minutes (preferably 3–4 hours). Slice with a sharp knife. Serve cold or reheat.
