Ingredients
- Olive Oil - 1 tablespoon
- Garlic - 2 cloves
- Turnips - 1 piece
- Thyme - 3 sprigs
- Carrot - 4 pieces
- Chicken Broth - 28 fl oz
- Skim Milk - 17 fl oz
- Canned Baby Beets - 28.2 oz
Step by Step guide
Step 1
Peel the turnip, carrot, and garlic. Cut the turnip and carrot into equal cubes. Remove the leaves from the fresh thyme sprigs and chop finely with a sharp knife.
Step 2
In a large saucepan, heat the olive oil, add the chopped garlic, and sauté until soft. Add the thyme, carrot, and turnip, and sauté everything together lightly, then pour in the broth and milk. Bring to a boil and simmer on low heat for 15 minutes.
Step 3
Meanwhile, drain the beans and let them sit in a colander for a few minutes to allow the liquid to drain.
Step 4
Transfer one-third of the soup volume to a blender and blend. Return to the pot, then add the beans. Let it cook for a couple of minutes (no longer, or the beans will become mushy). Serve immediately.
