Description
Instead of straining through a sieve, you can blend the soup in a blender.
Ingredients
- Butter - 2.6 oz
- Onion - 12.3 oz
- Leek - 3 lbs
- Potato - 26.5 oz
- Chicken Broth - 3 qt
- Cream - 9 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Chives - 3.5 oz
Step by Step guide
Step 1
Peel and finely chop the onion and potato, wash and slice the leek and chives, keeping them separate.
Step 2
In a large pot, melt the butter, add the onion, and sauté until golden brown.
Step 3
Add the leek to the pot and sauté for another five minutes. Then add the potato and pour in the broth. Cook for thirty minutes.
Step 4
Cool the soup and strain it through a sieve. Chill again and pour into a soup bowl, add the cream, salt, and pepper. Stir until smooth.
Step 5
Chill the finished purée soup and garnish with chives.
